DIRECTIONS

In a large saucepan, cover the potatoes with water and season with salt. Bring the water to a boil and cook until the potatoes are easily pierced with a knife, 12 to 15 minutes. Drain and let cool a bit.

In a large bowl, combine mayonnaise, onion, Dijon mustard, lemon juice, pickles, and paprika. Stir until well blended. Add the cooked potatoes, eggs and scallions, then season with salt and pepper. Refrigerate until ready to serve.

Serve over butterhead lettuce.
