1.) 400 grams of good quality white glutinous rice
2.) 200 ml water
3.) 1 tsp fine granulated sugar
Ground spices:
1.) 4 cloves garlic
2.) 1/3 tsp round pepper
3.) 1/2 tsp grilled shrimp paste
4.) 1 tbsp salt
Steps to make rengginang:
1. Wash the glutinous rice, soak it in water for three hours. Drain.
2. Steam the glutinous rice until half cooked for 20 minutes or until the rice grains start to stick. Remove, transfer to a saucepan.
3. Bring water to a boil, add sugar and ground spices, stir. After boiling, remove the glutinous rice immediately.
4. Pour the cooked spices into a pot of glutinous rice, mix well. Cover the pot, let stand about 30 minutes or until the water is completely absorbed by the sticky rice. Steam the glutinous rice again until cooked, about 30 minutes.
5. Take one tablespoon of sticky rice that is still hot, flatten it into a round shape with a diameter of 6 cm and a thickness of 0.5 cm.
Place on a clean dry tray but do not stack. Do this until all the glutinous rice is used up.
6. Dry in the sun for about three days or until completely dry. Store in a dry place.
7. Heat enough cooking oil over high heat. Fry the renggingan while turning it over until the glutinous rice grains start to expand. Lift and drain.
Once cool, store in tightly closed jars.
